Cut from the ribs (6-12), this steak is cut between the bones, making it a great option for two people, or one really hungry one. The Cowboy Steak has a high fat content making for a delicious steak, and is well known for making great roasts. Also known by the names côte de bœuf, chuletón, &  (when the bone is left long)
