Our dry aged bone-in rib roast is aged at least 30 days in a temperature and humidity controlled aging cave before it is hand-carved custom for you.
The Standing Rib Roast, or Bone-In "Prime Rib", is a highly marbled, larger roast perfect for serving a crowd. Sold by the bone in sets of 2, 3, 4, 5, or 7 bones, each bone is approximately 2 to 2.5 pounds. Weight ranges on each roast are an approximation and will be determined by the size of the loin your roast is cut from.
We recommend ordering a Boned & Tied (bones cut off and then tied back on) roast as this allows even cooking and the benefit of "bone-in" flavor without the hassle of carving around bones. Simply snip the butcher's twine to remove the bone plate and watch your guests vie for who gets the dinosaur ribs.
